
Tasting Notes
A traditional method sparkling wine made vegan friendly from organic Chenin grapes sourced from Settlers Ridge in the pristine Margaret River region. After the initial fermentation the wine was transferred to Sittella Winery in the swan valley to prepare for secondary fermentation in bottle under the direction of wine makers Colby Quirk, who trained at Chandon, and award winning Yuri Burns.
After preparing the wine for “liqueur de triage” (sugar and yeast) the bottles were laid down for two years lees maturation which added a lovely brioche like complexity to the sparkling wine. Finally the bottles were riddled, disgorged and dosaged to a level of 8g residual sugar to reflect the style of the French Champagne Houses without compromising the flavour of the Margaret River fruit.
